Hope you're all having a FABULOUS Sunday. The weather here is finally showing some sunshine and I'm in heaven. I know we desperately need rain here in Cali, but I need a little sunshine in my week.
So I've finally have an idea of the direction I want to take this blog. I don't have time to blog everyday -- I apologize. Though I'm not sure if anyone is actually reading this, and if that is the case -- then I'm not sorry. :)
So this is the schedule I have in mind:
Sunday- Recipe
Monday- Motivation
*Because Monday's suck...so well that's my reasoning.
Wednesday- Exercise ideas
*Turning hump day into no lump day! (See the pun I did there)

I do however apologize for the late post this morning. I was hoping to get this recipe up early in case anyone wanted to make crepes this morning.
But in case you are waking up late, having brunch, or just want crepes for lunch--
Here is a great little treat.

This is a really simple crepe recipe, but it uses one of my favorite recipes -- Chocolate Herbalife Protein Drink Mix. If you haven't already noticed, I'm an Herbalife freak. I love the products and they have done and continue to do such great things for my body. Though if for some reason you don't have Herbalife and you have a different protein drink mix you would like to use, feel free to substitute it.
Herbalife PDM Crepes
2 Egg
Whites
*Note- Michelle uses whole eggs. I don't like the
yolk of the egg. I'm weird, I know. If you want to use the whole egg -- Go for
it.
3 TBSP of Light Vanilla Soy Milk
*Feel free to use whichever milk you like. I prefer
soy because I hate almonds, I don't drink regular milk, and I prefer it over
coconut milk.
1 Scoop of Herbalife Chocolate PDM
*OR your protein drink mix
The result is about 3-4 crepes OR 2 pancakes.
Mix ingredients in a bowl till you have a thin consistency
Head up a small or medium non-stick frying pan
Pour about 1/4 of cup into pan -- (the more batter you use the thicker the crepe will be --my first patch was more of a pancake thickness -- as you see in the photo below)
Flip over half way through....
EAT!!!!
A really simple, healthy and DELICIOUS breakfast.
I topped mine with peanut butter and paired it with 1/2 cup of fat free cottage cheese and reduced sugar dried cranberries (they are my weakness).

Hello, I just wanted to say that I appreciate the Herbalife crepe recipe you posted. When I couldn't really find one at first, I tried coming up with my own (with some mixed results). But now thanks to your recipe, I think I have figured out how to fix it (I'm using too much egg). Thank you!
